I know that workgroup edition does not require having a domain, but what about after you grow past the workgroup size? For various reasons we're not running a domain currently and aren't likely to soon, but we'd like to move to using TFS. Is this possible?

The word "workgroup" has been overloaded which has lead to some confusion. "Workgroup Edition" is a 5 user limited version of TFS, it can run using Active Directory for authentication or Windows Workgroup Authentication.
Any version of TFS (Workgroup, Trial, or Full) can use either Active Directory or Windows Workgroup Authentication. See the following MSDN article about running TFS against workgroup authentication:-
So no - a domain is NOT required. If you purchase a full version of TFS you can carry on using workgroup authentication but get rid of the 5-user limit on users that comes with "Workgroup Edition"...
I know it's confusing - we've all complained many times but I don't think the Marketing folks read newsgroups :-)
